Lang Manufacturing: The Name Behind Industry Firsts
Established by Frank Lang in 1904, Lang Manufacturing has provided high-quality cooking equipment establishments in the marine and foodservice industries. Frank Lang initially became known for his smoke-burning range, which he later innovated and introduced into the marine cooking equipment market as his staple product. He later transferred the know-how and experience to commercial kitchen equipment. This decision marks the beginning of a series of “firsts” on the market. Lang Manufacturing designed the first industrial electric convection oven in 1960. Then, it pioneered the weight-of-the-plate cheese melter and clamshell griddle in the 1970s and 80s, respectively.
After a successful transition from the marines to the commercial kitchen industry, Lang Manufacturing improved its ovens, ranges, and griddles. Electric convection ovens and two-sided clamshell griddle technology owe today’s advanced levels to the strong legacy behind the company Lang Manufacturing. This notable rise immediately captured the attention of giants in the foodservice equipment industry. Lang Mfg was acquired by the Star Manufacturing Group in 2006, which later joined The Middleby Corporation in 2007.

1. Lang Manufacturing Convection Ovens

Lang griddles are available in gas and electricity fuel types. All the models feature one-inch-thick plates, ensuring higher heat retention and faster heat transfer to cooked products. You can choose from 23 inch and 30-inch extra deep models for plate depth. Deeper griddle plates maximize your cooking area, removing size constraints. Besides plate thickness and depth, the surface finish can also make a difference in performance. Lang griddles have chrome plates, providing easier cleanup and removing flavor transfer from plate to food.
3. Lang Manufacturing Clamshell 2-Sided Cooking Solutions
Lang clamshell griddles are perfect for high-volume operations. They can cook on both sides, reducing total cook time by half. While contact and radiant clamshell griddles run on electricity, infrared clamshell models are fueled by gas. A standard commercial griddle cooks a chicken breast cooks in 10 minutes. The radiant clamshell griddle cooks it in 5 minutes, and the contact clamshell griddle in 3.30. With the three-inch clearance between the shell, these commercial griddles can accommodate irregularly-shaped proteins, increasing menu flexibility.
4. Lang Manufacturing Cheese Melters
You can easily convert Lang cheese melters to a wall-mount or pass-through unit. The greatest thing about these commercial gas or electric countertop cheese melters is the weight-triggered on/off function. Depending on the weight of the plate, they automatically turn on or off, improving safety and efficiency. The top-mounted infrared heaters heat the unit incredibly fast, reaching 1650 °F just in 10 seconds.
