Dough Cutters

Professional Dough Cutters & Scrapers

Dough cutters and scrapers are baking smallwares used to divide dough, portion ingredients, shape baked goods, and clean work surfaces. Bakeries, pizzerias, pastry shops, and restaurants use dough cutters to improve production speed, maintain portion consistency, and support uniform baking results. They buy bench scrapers, wheeled cutters, cookie cutters, and other types for different bakery tasks.

What are the Types of Dough Cutters?

Commercial kitchens use bench scrapers, cookie cutters, multi-wheel dough cutters, wheeled pastry cutters, doughnut and biscuit cutters, bread lames and dough scorers, and specialized dough cutters to portion, shape, score, and prepare dough products.

• Bench Scrapers & Dough Scrapers feature a wide straight blade that divides dough, lifts portions, transfers ingredients, and removes flour or residue from worktables. Bakeries and pizzerias use these tools for bread, pizza, and pastry production.
• Cookie Cutters create consistent shapes for cookies, pastries, fondant decorations, and specialty baked goods. Commercial bakeries use round, square, oval, fluted, holiday-themed, and custom-shaped cutters to maintain product uniformity and presentation.
• Multi-Wheel Dough Cutters feature expandable arms and multiple cutting wheels to divide large dough sheets into equal strips. Bakeries, pasta operations, and pastry shops use them to increase production efficiency and maintain consistent dimensions.
• Wheeled Pastry Cutters feature rotating blades to cut rolled dough cleanly and accurately. Bakers use single-wheel and double-wheel designs for lattice pie strips, ravioli, pasta sheets, pastries, and decorative dough applications.
• Doughnut & Biscuit Cutters create uniform circular shapes for baked goods. Doughnut cutters include a center cutter that forms the traditional hole, while biscuit cutters provide clean edges that support consistent baking performance.
• Bread Lames & Dough Scorers feature razor-sharp blades to score artisan bread before baking. Scoring directs dough expansion during oven spring and creates the professional patterns found on baguettes, sourdough loaves, and rustic breads.
• Specialized Dough Cutters include croissant cutters, ravioli stamps, empanada presses, dumpling molds, calzone presses, and lattice cutters.

Considerations for Buying the Best Dough Cutters

Choosing the best dough cutters requires evaluating shape type, material construction, ergonomic features, food safety standards, and size specifications.

• Shape Type: Foundational geometric shapes, round, square, and oval cutters, support the everyday production of cookies, biscuits, and ravioli. Bakeries also utilize novelty shapes, such as leaves, butterflies, and animal forms, alongside theme-specific designs, for customized orders.
• Blade Material: Stainless steel blades resist rust and simplify cleaning; high-carbon steel blades maintain sharper edges for clean cuts through sticky dough and pastry.
• Handle Material & Ergonomics: Polypropylene, ABS plastic, hardwood, and stainless steel handles provide different levels of grip, durability, and sanitation performance for commercial bakery environments.
• Handle Color: Color-coded handles help separate tools used for different ingredients and reduce cross-contamination risks in bakeries, restaurants, and institutional kitchens.
• Size & Measurement Markings: Many commercial dough scrapers measure between 5 in (12.7 cm) and 7 in (17.78 cm) wide. The etched measurement markings ensure precise portioning.
• Certifications: Certifications, such as NSF and Made in USA, ensure compliance with sanitation requirements.
