Water test strips are single-use, paper- or plastic-based reactive kits containing chemical reagents that change color when exposed to specific substances in water. In a restaurant, bar, cafe, or commercial kitchen, water quality and sanitizer testing are not optional but an operational and regulatory requirement. Water test strip packs typically contain 50 to 100 strips per vial or roll, from which you can tear a small strip and use it for testing.

Chlorine test strips measure free available chlorine (FAC) and total chlorine concentrations in sanitizing solutions. Food codes require chlorine sanitizer concentrations in three-compartment sinks and dishwashers to fall between 50 ppm and 200 ppm (parts per million) according to West Virginia University. Chlorine test strips typically cover ranges of 0–200 ppm or 0–500 ppm, with color pads reading in increments of 10, 25, or 50 ppm, depending on the product.
Iodine test strips are used to test iodophor-based sanitizers, with typical measurement ranges of 0–25 ppm. Quaternary ammonium (quat) sanitizer test strips measure quat concentrations, typically in the range of 0–400 ppm or 0–1000 ppm, and are used for no-rinse sanitizing solutions and surface sanitizers.
pH test strips measure the acidity or alkalinity of water and solutions on a scale of 0–14. pH test strips provide a quick and practical testing solution for foodservice establishments since pH directly affects sanitizer effectiveness.
Hard water, which refers to high levels of calcium and magnesium, causes scale buildup in commercial dishwashers, steamers, coffee brewers, and ice machines. Water hardness test strips measure total hardness in grains per gallon (GPG) or milligrams per liter (mg/L), with common ranges of 0–425 mg/L or 0–25 GPG.
