Reach-in: capacity - (5) 18" x 26" sheet pans, (8) 12" x 20" x 2.5" steam table pans (Table & Sheet Pans NOT included) This performance increases the cooling and freezing capacity by up to 30%, thanks to the use of the 5-speed "EC" Electronic Evaporator Fans, which manage temperatures from -31ºF to +185º F, Scroll compressors and one-speed condenser fan. With climate class 5, it gurantees excellent performance above 104ºF ambient. Rapid Blast Chill capacity yield of 88 lbs. from finished cooked temperature 194°F to 37°F in approximately 90 minutes & Rapid Shock Freeze capacity yield of 88 lbs. from finished cooked temperature 194°F to 0°F in approximately 4 hours.
