Blast chillers are rapid freezing and chilling solutions that are engineered to cool or freeze the ingredients below the danger zone where bacterial growth is at its peak. Irinox CP Next proofing cabinets have 3 different operation modes: Positive (retaining temperature between 23°F to 59°F (-5°C to 15°C) to hold ready-to-serve foods), Chocolate (designed for preserving chocolate products between 50°F to 59°F (10°C to 15°C)), and Negative (-13°F to 59°F (-25°C to 15) for long term frozen food storage.)
