Baxter Commercial Ovens

Baxter commercial ovens upgrade the overall culinary experience with a rich assortment of food items, from the allure of artisan bread to the enticing scent of freshly baked food on-site. Available in gas and electric models, Baxter revolving ovens and mini convection ovens bake, roast, and rethermalize.

  • Baxter rotating ovens have single and double-rack options. Their most distinctive feature is the unique airflow system that draws air up to the heat exchanger and directs heated air across the oven. The robust rack lifts and starts rotating automatically, maintaining uniform heat distribution. This versatile design makes Baxter bakery ovens flexible enough to bake pastries, cookies, breads, proteins, and more.
  • Baxter mini rotating rack convection ovens provide the same versatility in a smaller footprint. These Baxter ovens occupy a 48-in (121.92 cm) wide and 38.1-in (96.78 cm) deep footprint. They come in 6, 8, 10, or 12-pan configurations.

Baxter Oven Racks

Baxter Ovens provides roll-in racks in single-side, single-end, and double-side load options. They are constructed from durable 16-gauge stainless steel and mobile on 4-in (10.16 cm) swivel casters. Depending on the spacing between slides, they accommodate 10, 12, 15, or 20 standard hotel pans.

Baxter Proofers

Baxter Ovens uses a patented airflow system with dual 6-in (15.24 cm) fans in its proofers. Multiple independent air ducts and a nozzle make up the humidification system, creating efficient moisture. The digital control panel placed at eye level allows precise management of temperature, humidity, and 4 independent rack timers, ideal for handling multiple products with varying proofing times simultaneously. Baxter proofers are available in 1, 3, and 3-section models.

Baxter Retarders/Proofers

Baxter retarders/proofers have the same patented airflow and humidity system as the proofers. Its digital controls have a programmable 24-hour timer, allowing retarding and proofing cycles up to one week in advance. The 1 and 2-section units come in 5 depths, accommodating 3 to 12 single or 2 to 6 double racks.

Baxter Water Meters

Baxter Ovens uses microcomputer controllers in its water meters to adjust the amount and temperature of water in every dough mix precisely. They easily mount on a standard mixing bowl or sink through a stainless-steel hook on the dispensing hose.

Baxter Ingredient Bins

Baxter stainless steel ingredient bins have 2 to 3 sections for storing flour, sugar, salt, or other dry ingredients used in baking. They hold 120 lb (54.43 kg) of flour or 190 lb (86.18 kg) of granulated sugar. They are 36-in high to fit under a table easily. The 3-in casters facilitate moving even when fully loaded.

Heat Exchanger System

Baxter Ovens uses a gas-fired heat exchanger system to upgrade the heat transfer uniformity. The U-shaped tubes house a turbulator that tumbles the flame, making it gentler for even heat distribution.
