Cook With Steam Pressure Power

Pressure steamers are steam cooking equipment with an airtight cooking cabinet where food items are cooked with pressurized steam. These commercial steamers work like the instant pot steam rice process. Vegetables or proteins are placed in cooking compartments on pans. Steam pressure ranging between 5 and 15 psi (pounds per square inch) increases internal temperatures and cooks even the tough items faster. 

When buying high-pressure steamers, fuel type may make a big difference. Electrically-heated steam boilers usually operate at 9-11 psi, while gas-fired models are more efficient and can reach higher maximum pressures faster. You can choose two or three cooking compartments, each holding 6-8 pans, based on your capacity requirements, and you can set cook times individually for each compartment. Pressure steamers can also have an open or a cabinet base. Pressure steamers with a cabinet base would give you an extra storage area.

Pressure steamers and convection steamers are often compared in terms of cost and efficiency. Pressureless models cook at 212°F, but the pressure cooker's steam power can increase the temperature to 250°F. Therefore, they can reach higher temperatures and cook tough products more quickly. Pressure steamers are oversized, pricier, and perfect for high-volume cooking applications. If you cannot decide between the two, you can opt for a dual pressure steamer. In these models, the lower compartment is usually a pressure cooker. The upper chamber can operate with or without pressure.
