Condensate Hoods Remove Hot Air, Steam, And Moisture From Your Kitchen

Ventilation systems are the lungs of commercial kitchens. All the cooking and washing equipment and tasks in a restaurant kitchen generate considerable smoke, steam, heat, and grease-laden vapors. These harmful contaminants pose serious health and fire dangers if not vented through commercial kitchen hoods. Therefore, many local/national health and fire codes mandate installing commercial kitchen hoods designed for various purposes.

What Is A Condensate Hood?

A condensate hood is a ventilation system required for expelling heat and steam produced by cooking equipment and dishwashers in a commercial kitchen. Condensate hoods are Type II Hood designed to extract hot air puffs released during some cooking and washing operations. Then, what is a Type I Hood and Type II Hood? Commercial kitchen hoods broadly fall into two categories by the material they remove. Type I Hoods are mounted above broilers, grills, fryers, and ovens to collect and filter out smoke, airborne grease, and heat. Restaurant hood systems and food truck hood systems are of this type.

Commercial kitchens are also packed with industrial dishwashers, coffee machines, and pizza ovens. Such equipment produces a great deal of steam, vapor, and heat, increasing the ambient temperatures. Type II Hoods, placed above non-grease producing appliances, capture and dispose of the hot air. Condensate hoods are of this type. Steamers, kettles, and pasta cookers also require condenser hoods. These hoods often don't have grease filters, so they cannot be used with Type I applications.

How Does A Condensate Hood Work?

Cooking and warewashing are an integral part of commercial kitchen operations. Kettles, steamers, combination ovens, dishwashers, and hot water sanitizing applications fill the air with moisture. Hot and humid air in a restaurant kitchen is not always safe for food and employees, so condensate hoods eliminate this problem by capturing excessive steam through their slanted condensation plates. Upon contact with steam, the internal baffles and deflectors convert the steam into water, which is then channeled into the drain tubes. Condensate hoods thus control humidity levels and regulate the temperatures in your kitchen.

Without steam hoods, condensation would happen by itself. Water would drip here and there, causing slippery grounds and insanitary food contact surfaces. Plus, excess heat from different equipment increases the temperatures. If not exhausted by condensate hoods, the atmosphere in your kitchen would be unbearable for the staff. A hot and humid environment is also an open invitation to mold and bacteria growth on surfaces and oxidation on equipment. The overall result is a hot and sticky kitchen with foods facing spoilage risks.

How To Choose A Condensate Hood?

An essential consideration in choosing your condensate hood is the material used in construction. Heavy-duty stainless steel is almost the standard material with its durability and resistance to corrosion. The commercial kitchen hood will mount over all the steam-generating equipment in your kitchen. You may need to get several condensation hood vents to match the type of equipment and available space. Therefore, measuring the clearance between your appliances and the ceiling is crucial. Then you can check the length, width, and depth dimensions of your choice.

Not all hoods work with any steam generating equipment. There are separate condenser hoods for different equipment. The commercial kitchen hoods industry is becoming increasingly competitive, and manufacturers specialize in condensate hoods that suit only certain equipment. For example, there is kitchen hood condensation designed particularly for bakery ovens.

Condensate hoods play critical roles in commercial kitchen ventilation systems. They keep the food, floors, and appliances safe from slipping risks, spoilage, and rust. Your employees can also benefit from a more comfortable working environment free from high humidity. You can see the models at Chef's Deal from trusted brands, Tarrison, Univex, and Vulcan.
