Middleby Marshall CTX Infrared Conveyor Ovens – Speed & Versatility

Middleby Marshall designed CTX to incorporate multiple cooking methods into a single unit. These ovens bake, broil, sear, steam, or sous vide items, which is ideal for high-volume kitchens. The automated continuous cooking and infrared heat technology combine to cook up to 60% faster than any conventional cooking equipment. CTX ovens operate within a 200°F - 900°F (93°C - 482°C) temperature range. Baking chamber sizes are 26 or 31.22 inches (66.04 or 79.3 cm), and conveyor belts are 42.16, 42.3, or 56.25 inches (107.08, 107.44, or 142.88 cm).

Middleby Marshall X-Series Conveyor Ovens – Next Generation WOW

Middleby Marshall redesigned its WOW ovens for easier serviceability and longer performance. The IoT technology in these gas-fueled ovens makes them compatible with Open Kitchen. The conveyor belt is reversible to offer automatic product delivery once the cooking is over. Operating between 300°F and 600°F (149°C-315°C), these ovens are available in 55 or 70-inch (139.7 – 177.8 cm) cooking chambers and 90.78 or 106.1-inch (230.58 – 269.49 cm) belt lengths.

Middleby Marshall Countertop Conveyor Ovens – The Compact Giants

Middleby Marshall countertop line offers the same speed and power but in a smaller footprint. The variable-speed motors recirculate impingement airflow to cook products evenly at 550°F (288°C). The standard conveyor belt length of 48.4 inches (122.94 cm) comes with 2 baking chamber sizes, 20 and 26 inches (50.8 – 66.04 cm).
