Wok Ranges – Chinese Wok Ranges, The Staples Of Asian Cuisine-Inspired Restaurants

A wok range is a commercial range with a unique design to accommodate round-bottomed woks. Also known as Chinese wok ranges, these stoves feature a stainless steel body and a raised cast-iron ring on the range top. The ring enables the round bottom of woks to sit safely on the stovetop, which would otherwise not be possible on the flat surface of a standard range. Wok burner stoves also generate high powers needed for Asian-style menus.

Wok ranges come in many different sizes and configurations. The greatest thing about the wok stoves is that they are customizable. First, you can choose models with or without a flue riser. Second, you can select from up to 8 burner quantity sections. Your wok burner stove can have 8 holes cut out on the range top. You can also specify the size of each hole from 13 to 24 inches, depending on the dimensions of your woks. Plus, multiple-burner wok ranges often have faucets between chambers for water-cooling the range top.

Commercial wok ranges are versatile enough for boiling soups, pan-frying, or steaming-cooking. You can customize your range by adding optional steam pans or soup potholders. However, the intense heat produced by a range with wok burners is the staple of stir-frying. Stir-frying requires a special skill. Chefs have to hold woks, cooking utensils, and ingredients in both hands, making heat control an issue. Most wok ranges have an L-shaped lever at knee level for hands-free temperature adjustments.

Although electric and more energy-efficient induction wok ranges are also available, gas is the primary fuel source. That’s because gas is more efficient and can reach high temperatures instantly necessary for wok cooking. Some operators may consider using a wok for an electric stove. That wouldn’t be a practical solution because placing a wok on a flat surface can be challenging. Plus, a standard gas or electric stove fails to provide as powerful energy as a wok range needed for Chinese-style stir-frying.
